Klemmings oysters work with two types of oysters. The oysters we pick are "Ostrea Edulis" also called European flat oysters and "Crassostrea Gigas" or so-called South Sea oysters. The oysters are wild and are plucked by professional fishermen.  To be able to pick oysters, you must have the land rights holder  permission. The oysters are found from the shoreline down to a depth of fifteen meters.  We handle the soil with care and look after the soil by thinning and picking up the large oysters and making room for the smaller oysters. The oysters are picked from the first week of September until midsummer, when the oysters have their reproductive period during July-August. 

Ostrea Edulis are picked when they are at their smallest 3-4 years old while Crassostrea Gigas have a much faster growth phase and are picked when they are about 1 year old.  Oysters are, like all other seafood, a fresh product we work with on a weekly basis and deliver the oysters to our restaurants the same day they are taken  out of the sea.
